Alert, this recipe is in no way “skinny”. If you’re looking for some “skinny crunch”, you’re best off nibbling on carrots!

That full flavor can only come from a fair amount of fats and sugar. Not real over the top, but a generously fair amount for an extra tasty {and somewhat guilty} treat. And hey, as the recipe makes just one, turn a blind eye! No one’s looking anyway…

The streusel gives it a satisfying crunch on top and a “little” surprise inside. Yes, you put loads of that tasty almondy streusel inside!

I tried and tested this recipe for a good couple of days. Every time I just ended up making more streusel.

I started with a tablespoon on top. It was good, but made me crave more. Then a spoonful purposefully got lost in the middle. It kinda got awesome, but still not enough! Finally I ended up hiding 2 big spoons of that crunch inside.  No way less is more! Who ever made that up, does not know streusel…

I just love how the streusel in the middle makes the inside slightly crumbly. And once you top it with some lemony sugar glaze…Priceless, I tell you.


It all might sound like a fair bit of work, but I can assure you it’s not!  Still only basic mixing and then just baking away.

The sole thing to keep in mind are measurements. If that’s done right, your muffin will come out perfect. And as it’s absolutely delicious, you will want to make it way too often.

The Single Serve Glazed Double Crunch Almond Streusel Muffin

This recipe makes a single delicious bakery-size high-top muffin, with a crunchy almond streusel stuffing and topping. To freshen up the full flavor, a drizzle of some lemony sugar glaze works perfect.
Serves: 1

  • 1 tbsp of rolled oats
  • 1 tbsp of brown sugar
  • 1 tbsp of butter
  • 2 tbsp of crushed almonds
  • 1 tbsp of all-purpose flour

  • 6 tbsp all-purpose flour
  • 2 tbsp brown sugar
  • ¼ tsp baking powder
  • ¼ tsp cinnamon
  • pinch of salt
  • 3 tbsp of milk
  • 2 tbsp of vegetable oil

  1. Preheat oven to 225°C / 440 °F.
  2. Flour and butter ramekin, set aside for later.
  3. First prepare your streusel. In a cup mix rolled oats, almonds, sugar and butter until paste like consistency. TIP: it’s best to do it with a fork. Add all-purpose flour and fluff your streusel gently to form crumbs. Set streusel aside for later.
  4. Next make muffin batter. In a medium size bowl mix together dry ingredients. Note: best to sift through flour and baking powder.
  5. Add milk and oil to dry ingredients and incorporate. Make sure not to over mix.
  6. Spoon half the batter in ramekin and top with half the streusel. Add rest of the batter and top with remaining streusel.
  7. Bake 5 minutes at 225°C / 440 °F. Then lower heat to 200°C / 390 °F and bake another 20 minutes. Cover with foil, if streusel starts to burn.

    • Love it that you love the recipe {gush}….I don’t quite remember how I made the glaze, but I think it was confectioners sugar with single and a spritz of lemon juice. Let me know how the glaze works out, yum!
