When I started testing with this gooey chocolate cake for one, I was actually trying to make a fudgy brownie. I only ever baked brownies once before, a good few years back.  I would have guessed I remember the basics. Nothing…gone, memory nonexistent.

Single Serving Gooey Chocolate Cake For OneAs I’m pretty much a baking novice, going straight for a single serve recipe would have been the right thing to do. I guess I didn’t want easy, and for some reason I wanted to invent. The next logical step would have been to adjust a regular brownie recipe to make a single serving.  It probably would have taken me a measly 5 minutes. But ooh no, not for me…again.

So I ended up with a gooey-molten chocolate cake instead. I’m not even a tiny bit bothered, as it’s still tasty as hell! I love the molten middle the most! It’s so silky, smooth and shiny. It’s pretty much everything I ever wanted from a chocolate cake.

Single Serve Chocolate Cake For One

As I was set on being a rebel {in reality just my true novice self}, I baked versions of my chocolate cake for a total of 6 times, on 3 different days. Believe it or not, but I have never known a single recipe for baking{by heart}. Not even pancakes….Cooking in general has never ever involved measuring for me. It’s always been “a pinch of that, a pinch of this” how I go about food. At least I now, truly, know one recipe by heart. A little personal win for me!! Ask me in a year, if I still remember!

It might well be, that I have to start getting used to being super precise{grrrr}, or I’ll never get to that intended brownie.

Until then, anything that I accidentally {re}invent will hopefully come out as tasty as my single serving gooey chocolate cake. Fingers crossed…

The Gooey Molten Chocolate Cake For One

This recipe makes one single serving gooey-yummy molten chocolate cake.For decadence, top it off with some white chocolate whipped cream and a sweet ripe strawberry.
Serves: 1

  • 2 tbsp brown sugar
  • 2 tbsp butter
  • 2 tbsp dark chocolate chips
  • 1 small egg
  • 4 tbsp all-purpose flour
  • 2 tbsp cocoa
  • ⅛ tsp baking powder

  1. Preheat oven to 180°C / 360 °F.
  2. Butter and flour ramekin and set aside.
  3. In a medium size bowl cream butter and sugar until soft.
  4. Add your egg and whisk until lightly fluffy.
  5. Melt chocolate chips slowly on a double boiler (alternatively use a microwave). Let cool a bit and mix with other wet ingredients.
  6. Sift flour, cocoa and baking powder in your bowl, mix with a rubber spatula until smooth.
  7. Spoon batter into ramekin and bake for 18 minutes.

1. Optionally top with some ice cream or anything else to complement. I whipped up some cream and mixed it with molten white chocolate. raspberries or strawberries are also a nice complement. 2. Best to let cool for 15 minutes and eat fresh. 3. For a gooier inside try baking it a few minutes less.
